Sixteen generations on, fruit is drawn from 140 hectares worked with 160 winegrowing families, mostly Grand Cru and Premier Cru, and the house actively incentivises organic and sustainable viticulture among those partners. Head winemaker Odilon de Varine ferments in stainless steel and blocks malolactic conversion outright — the single decision that defines the Gosset style, keeping the naturally fruity aromas and the acidity intact. This cuvée spends a minimum of five years in the cellar, then returns for a further six to nine months after disgorgement so the 4.8 g\/l dosage knits in.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8–10°C.
