The house works its own vineyards under vineyard manager Christelle Rinvelle and is certified HVE and Viticulture Durable en Champagne, drawing Chardonnay from several crus in the Marne and the Aube and Pinot Noir and Pinot Meunier from Ambonnay, Bouzy and Les Riceys. The wine was made by the addition method: 85% of the fruit was vinified as white wine and the remaining 15% as still red Pinot Noir from the Montagne de Reims and Les Riceys, blended in before three years of bottle age in the Taittinger cellars.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8–10°C.
