Description
2013 Champagne Dom Pérignon
About the Winery: Dom Pérignon, produced by Moët & Chandon, is one of the world’s most iconic prestige cuvées, released only as a vintage Champagne and only in years deemed exceptional. Named after the Benedictine monk credited with pioneering aspects of modern Champagne, the wine epitomises luxury, precision and age-worthy finesse. Each vintage reflects a singular creative interpretation of the year’s climatic personality, blending Pinot Noir and Chardonnay from Grand and Premier Cru vineyards to achieve Dom Pérignon’s trademark harmony, tension and depth.
Grape Variety: Typically a blend of Pinot Noir and Chardonnay (exact proportions vary by vintage and are not disclosed)
Appearance: Pale gold with luminous clarity and a fine, persistent mousse, reflecting long lees ageing and precision craftsmanship.
Aroma: Complex and evolving, with layers of citrus peel, white peach and green apple intertwined with florals, toasted brioche, almond, ginger and subtle smoky mineral notes. With air, nuances of pastry cream, honey and crushed chalk emerge, showcasing the wine’s depth and refinement.
Palate: Precise, vibrant and exquisitely balanced. The attack is energetic with citrus and stone fruit, followed by creamy, textural richness. Chalky minerality, delicate spice and refined autolytic notes carry through to a long, harmonious finish. A vintage marked by tension, purity and sculpted elegance, offering both early charm and significant ageing potential.
Body: Medium-bodied with a silky mousse and fine-textured structure.
Acidity: Medium to high — energetic, linear and essential to the wine’s longevity and precision.
Cellaring Potential: 15–25 years; developing deeper brioche, honeyed, nutty and truffle-like complexity while retaining its mineral backbone and elegance.
Perfect Pairing: Ideal with caviar, oysters, langoustines, sashimi, scallops, white truffle dishes, roast poultry and refined canapés. Its precision and layered complexity elevate luxurious and delicately flavoured cuisine.
Serving Temperature: 8–10°C to highlight aromatic precision, minerality and mousse finesse.
