Description

How it tastes

Mirabelle plum, apricot and orange blossom layered with spice and toast, the palate refined, silky, precise and pure. Chardonnay 38%, Pinot Noir 33%, Pinot Meunier 29%.

The producer

Named for Dom Pérignon (1638–1715), the Benedictine monk and cellar master at Hautvillers who did much to pioneer Champagne winemaking. Declared only in years the house considers worthy.

Food and drinking

Good with seafood, rich & creamy dishes and poultry & pork. Built for the long term — decades, if kept well. Serve at 10°C.
