Description
A full-flavoured, fine, and precise Champagne with notes of toast, soft peach, and ginger.
About the Winery: Dom Pérignon is a vintage champagne, produced only in the best years, expressing both the character of the vintage and the character of Dom Pérignon. Chef de Cave, Vincent Chaperon, ensures each Champagne spends at least eight years maturing in the cellar, embodying perfect balance and harmony.
Grape Variety: 38% Chardonnay, 33% Pinot Noir, 29% Pinot Meunier – a blend that contributes to the wine's elegance, structure, and aromatic complexity, offering notes of stone fruit, red berries, and a hint of spice. Chardonnay brings precision, citrus and stone-fruit purity, and chalky minerality; Pinot Noir adds structure, depth, red-berry intensity, and subtle spice; Pinot Meunier contributes roundness, floral lift, ripe orchard fruit, and approachability.
Appearance: Bright, clear, with fine, persistent bubbles.
Aroma: Elegant bouquet of Mirabelle plum, apricot, orange blossom, layered with spicy notes and toasty hues.
Palate: Refined and silky, precise and pure with delicious salinity on the finish.
Body: Full – this Champagne offers a substantial and opulent palate, indicative of its rich flavour profile and extended maturation.
Acidity: High – contributing to the wine's promising balance and full-bodied structure, providing freshness and longevity.
Cellaring Potential: Long (10-20 yrs) – the 2013 vintage revealed a promising balance between acidity and full-bodied structure, suggesting excellent ageing potential.
Perfect Pairing: Seafood, Poultry, Cheese
Serving Temperature: 8–10°C
