2016 Kripta Gran Reserva Cava, Agustí Torelló Mata
About the Winery: Agustí Torelló Mata is one of Spain’s most prestigious sparkling wine producers, dedicated exclusively to crafting high-quality Cava from indigenous varieties. Founded in 1950 and based in Sant Sadurní d’Anoia, the estate is renowned for meticulous viticulture, long lees ageing and a philosophy centred on terroir purity. Kripta is its flagship cuvée—first released in 1978—and is celebrated for its amphora-shaped bottle, extended maturation and exceptional finesse. Sourced from old, low-yielding vineyards, Kripta represents the pinnacle of traditional-method Spanish sparkling wine.
Grape Variety: 45% Macabeu, 25% Xarel·lo, 30% Parellada (from old vines)
Appearance: Pale gold with fine, persistent bubbles and luminous brilliance, reflecting long ageing and traditional bottle fermentation.
Aroma: Complex and refined, offering notes of baked apple, lemon peel, white flowers and Mediterranean herbs. Layers of toasted brioche, almond cream, hazelnut and delicate oxidative nuances develop with air, showcasing Kripta’s extended lees ageing and old-vine concentration.
Palate: Elegant, structured and exceptionally long. Flavours of citrus, stone fruit and pastry are supported by vibrant acidity and fine, creamy bubbles. Subtle nutty notes, chalky minerality and gentle salinity unfold toward a persistent, harmonious finish. A benchmark cuvée demonstrating the depth, finesse and ageing potential of top-tier Cava Gran Reserva.
Body: Medium-bodied with refined richness and elegant mousse texture.
Acidity: Medium to high — fresh, balanced and integral to the wine’s long ageing capacity.
Cellaring Potential: 10–15 years; developing deeper nutty complexity, honeyed notes and richer savoury dimensions while maintaining elegance and precision.
Perfect Pairing: Ideal with lobster, scallops, jamón ibérico, oysters, seafood paella, roasted chicken, truffle dishes and aged Manchego. Its structure and finesse allow it to pair beautifully with both refined seafood and richly savoury dishes.
Serving Temperature: 8–10°C to highlight aromatic complexity, mousse refinement and mineral depth.
