How it tastes
Opulent and saline with a mineral edge and a hint of liquorice, rich and creamy through a lingering finish. The same plot as the 2018, one vintage earlier.
The producer
Hervé Olivier rebuilt this estate by acquiring old Santenay vineyards that had been abandoned for almost a century, paying particular attention to plots historically known for white wine — a rarity in a predominantly red appellation.
Food and drinking
Good with poultry & pork, rich & creamy dishes and seafood. Ready now, and will hold for a few years yet. Serve at 16–18°C.
