About the Winery: Founded in 1885, Far Niente is one of Napa Valleyof great historic estates. Its name comes from the Italian phrase *‚¬œDolce Far Niente‚¬* ‚¬” ‚¬œhow sweet it is to do nothing.‚¬ Abandoned during Prohibition, the winery was restored in 1979 by Gil Nickel, who revitalised its legacy and developed 80 hectares across three vineyard sites. Far Niente is renowned for crafting benchmark Napa Valley Chardonnay, Cabernet Sauvignon, and its acclaimed late-harvest sweet wine, *Dolce*. Today, it remains one of Californiaof most prestigious producers, blending innovation with meticulous tradition.
Grape Variety: 88% Semillon, 12% Sauvignon Blanc ‚ grown on eight hectares in Coombsville, at the base of the Vaca Mountains in eastern Napa Valley. The volcanic soils are loose and well-drained, while the west-facing slope benefits from lingering autumn fog ‚¬” ideal for the growth of *Botrytis cinerea* (noble rot). This rare climatic combination allows gradual dehydration and natural sugar concentration, yielding grapes of remarkable intensity and complexity.
Winemaking: Only top-quality fruit was selected and divided into 10 unique batches for vinification. Fermentation occurred in temperature-controlled French oak barrels with selected yeasts, lasting one to two months. The wine was then aged for 28 months in 100% new French oak, developing a rich texture, caramelised depth, and vibrant aromatics.
Appearance: Deep golden amber with radiant clarity and viscosity.
Aroma: Complex bouquet of apricot, pear, honeysuckle, vanilla, and allspice with underlying cra¨me bra»lee and bread pudding notes.
Palate: Opulent and unctuous, combining ripe tropical fruit and caramelised citrus with honey, vanilla, and spice. The silky texture and refreshing acidity provide balance and length through to a clean, mouth-watering finish.
Body: Full-bodied with luscious, velvety richness.
Acidity: Bright, providing freshness and lift to the wineof sweet concentration.
Cellaring Potential: Drink now or cellar for 20+ years to develop deeper caramel, hazelnut, and marmalade complexity.
Perfect Pairing: Pair with blue cheese, foie gras, or apricot tart with almond cream.
