About the Winery: Founded in 1984 by Lindsay McCall, Paringa Estate stands at the heart of Victoriaof Mornington Peninsula and has become one of Australiaof most celebrated boutique wineries. Built on a former orchard, the estate has grown from humble beginnings to an annual production of 16,000 cases. Renowned for crafting cool-climate Chardonnay, Pinot Noir, and Shiraz, Paringaof wines pay homage to Burgundian tradition while expressing the unique volcanic soils and maritime influence of Red Hill. James Halliday calls Paringa Estate ‚¬œone of the best, if not the best, wineries on the Peninsula.‚¬ Today, Lindsay and his son Jamie McCall continue the family legacy of precision and excellence.

 

Grape Variety: 100% Chardonnay ‚ sourced from nine rows of the original Paringa Vineyard, planted in 1985 in the volcanic red Ferrasol soils of Red Hill, trained on a Lyre or ‚¬œU‚¬ trellis system to optimise sunlight exposure and ripeness.

 

Appearance: Pale straw with green-gold hues, reflecting cool-climate intensity and purity.

 

Aroma: Complex bouquet of white peach, citrus blossom, and lemon curd lifted by delicate floral and lees-derived notes, enhanced by hints of toasted almond and flinty oak.

 

Palate: Beautifully structured and balanced, offering layers of stone fruit, grapefruit, and nutty oak over a fine mineral backbone. The palate is textured yet vibrant, with subtle creaminess from barrel ageing and a persistent, elegant finish defined by natural acidity.

 

Body: Medium-bodied, with precise fruit concentration and graceful oak integration.

 

Acidity: Crisp and focused, providing balance and structure to the rich fruit profile.

 

Cellaring Potential: Drink now for its energy and elegance or cellar for 8‚10 years to gain additional complexity and hazelnut depth.

 

Perfect Pairing: Perfect with roast chicken, pan-seared scallops, or truffle pasta; also complements grilled lobster and creamy Brie.

 

Serving Temperature: Serve lightly chilled at 10‚12°C to reveal complexity and texture.
