2019 Pinot Noir “Day One”, Sonoma Coast, Senses Wines
About the Winery: Senses Wines is one of the rising stars of the Sonoma Coast, founded by three childhood friends who farm exceptional coastal vineyards with a focus on low yields, precision viticulture and minimal intervention. Working closely with acclaimed winemaker Thomas Rivers Brown, the estate produces limited, site-driven expressions of Chardonnay and Pinot Noir. “Day One” is a standout cuvée showcasing the cool, wind-swept coastal influence that defines the true Sonoma Coast—offering purity, tension and layered complexity.
Grape Variety: 100% Pinot Noir (cool-climate Sonoma Coast fruit)
Appearance: Medium ruby with bright clarity and a delicate, translucent rim.
Aroma: Red cherry, raspberry and cranberry lifted by rose petal, blood orange, baking spice, forest floor and a subtle coastal salinity. Perfumed and expressive with cool-climate purity.
Palate: Elegant, focused and finely textured with vibrant red fruit, silky tannins, refreshing acidity and a long, mineral-driven finish. Combines tension, precision and understated richness, capturing the essence of the Sonoma Coast’s maritime terroir.
Body: Medium-bodied with refined structure and graceful weight.
Acidity: Medium to high, offering lift, precision and age-worthy balance.
Cellaring Potential: Excellent—drink now or cellar 8–12 years to reveal deeper savoury, floral and mineral complexity.
Perfect Pairing: Duck breast, roasted salmon, mushroom risotto, poultry dishes, beetroot salads and soft-ripened cheeses such as Brie or Mt Tam.
Serving Temperature: 14–16°C to preserve freshness and highlight aromatic detail.
