About Nebbiolo: Native to Piedmont, Nebbiolo is a late-ripening, thin-skinned grape that yields pale-colored wines with high tannin and acidity, ideal for long aging. Typical notes include rose, tar, red cherry, and truffle, evolving to leather and dried herbs with time. It thrives on calcareous marl and south/southwest exposures in the Langhe. Fenocchio traditionally employs long macerations, spontaneous fermentations, and maturation in large Slavonian oak casks to preserve terroir and varietal purity.
