2021 Capitel Organic Verdejo, Ossian
About the Winery: Ossian is one of Spain’s leading white wine producers, located in Nieva, Segovia, where pre-phylloxera Verdejo vines—many over 150 years old—grow at high altitude in sandy, slate and gravel soils. Farmed organically and vinified with Burgundian precision, the estate is recognised for producing deeply textural, age-worthy Verdejo with remarkable purity and mineral tension. Capitel is Ossian’s flagship single-vineyard wine, expressing the full complexity and depth of these ancient, ungrafted vines.
Grape Variety: 100% Verdejo (pre-phylloxera, ungrafted, organically farmed)
Appearance: Pale straw with green flashes and excellent brilliance, showing the wine’s youth, concentration and high-altitude freshness.
Aroma: Intense and layered, offering notes of fennel, white peach, preserved lemon and wild herbs, supported by hints of smoke, almond skin and subtle oak spice. Mineral undertones reflect the ancient sandy soils of the vineyard.
Palate: Textural, concentrated and beautifully balanced. Flavours of citrus zest, stone fruit and green apple integrate with savoury herbal notes and a fine mineral backbone. The wine is creamy yet vibrant, finishing long, precise and lightly saline. A benchmark Verdejo with Burgundian finesse and exceptional depth.
Body: Medium-bodied with layered texture and refined weight from barrel ageing on lees.
Acidity: Medium to high — crisp, focused and essential for the wine’s structure and ageing potential.
Cellaring Potential: 6–10 years; developing greater complexity with notes of honey, toasted nuts, lanolin and deeper mineral expression while retaining freshness.
Perfect Pairing: Ideal with roast chicken, white fish, prawns, grilled octopus, Spanish cheeses, saffron dishes, paella and herb-driven Mediterranean cuisine. Its savoury depth and mineral persistence pair beautifully with richer seafood and aromatic dishes.
