2021 Château Pichon Baron, 2ème Cru Classé, Pauillac
About the Winery: Château Pichon Baron is one of Pauillac’s most celebrated estates, ranked as a Second Growth in the 1855 Classification. With deep gravel soils overlooking the Gironde, the château is known for crafting powerful, precise and age-worthy Cabernet Sauvignon–driven wines. The estate combines meticulous vineyard management with cutting-edge cellar practices, resulting in wines that consistently reflect Pauillac’s hallmark structure, graphite minerality and refined intensity.
Grape Variety: Cabernet Sauvignon–dominant blend with Merlot, Cabernet Franc and Petit Verdot (composition varies by vintage).
Appearance: Deep ruby-purple with a luminous core and youthful violet rim, showing energy and concentration despite the cool vintage.
Aroma: Blackcurrant, blackberry and plum layered with graphite, cedar, cigar box, violets and subtle spice. Fresh, lifted and classically Pauillac in definition.
Palate: Medium-bodied, elegant and finely structured with pure dark fruit, firm yet polished tannins, bright acidity and a long, savoury, graphite-driven finish. A refined, terroir-transparent expression of Pichon Baron in a cooler year.
Body: Medium to full-bodied with sculpted structure and finesse.
Acidity: Medium to high, bringing lift, definition and excellent ageing potential.
Cellaring Potential: 12–20+ years; developing deeper graphite, cedar, cassis and savoury nuances with bottle age.
Perfect Pairing: Ribeye steak, roast lamb, venison, duck breast, wild mushrooms and aged hard cheeses such as Comté or Gruyère.
Serving Temperature: 16–18°C; decant for 1–2 hours to open the aromatics and refine the tannins.
