2021 Puligny-Montrachet, Sylvain Debord
About the Winery: Sylvain Debord is a talented Burgundian winemaker whose work reflects a deep respect for terroir and traditional craftsmanship. Having built his experience through years of collaboration with some of Burgundy’s leading estates, Debord is known for producing wines of purity, finesse and precision. His Puligny-Montrachet bottling comes from carefully selected limestone-rich parcels that deliver the village’s hallmark tension, mineral drive and understated elegance.
Grape Variety: 100% Chardonnay
Appearance: Pale lemon with green glints, bright and youthful, reflecting the cool 2021 vintage and Puligny’s mineral soils.
Aroma: Refined and expressive with notes of citrus blossom, white peach and crisp pear, supported by chalky minerality, delicate floral undertones and subtle hazelnut from restrained oak ageing. A hint of flint adds further finesse.
Palate: Elegant, linear and beautifully balanced. Vibrant acidity frames flavours of lemon zest, green apple and white stone fruit, layered over wet stone and gentle spice. The texture is sleek and precise, leading to a long, saline, mineral-driven finish characteristic of Puligny-Montrachet’s finest expressions.
Body: Light to medium-bodied with refined structure and subtle creaminess from lees ageing.
Acidity: Medium to high — crisp, focused and essential to the wine’s mineral definition and ageing potential.
Cellaring Potential: 6–9 years; developing toasted nut complexity, honeyed depth and enhanced limestone minerality while retaining tension and elegance.
Perfect Pairing: Ideal with Dover sole, scallops, oysters, roast chicken, creamy pasta, vegetable risotto and soft cheeses. The wine’s purity and finesse make it an excellent match for elegant seafood and refined French cuisine.
