About the Winery: Sylvain Debord is Burgundian by birth and by heart. After studying at the Lycee Viticole de Beaune in 1991, he began working closely with many talented producers, including Nicolas Potel, with whom he has collaborated since 2006. From 1994, Sylvain studied at the University of Burgundy and contributed to several viticultural research projects while managing the universityof experimental centre at Marsannay-la-Ca´te ‚¬” a role he continues to hold links with today. His philosophy is guided by respect for nature, the vineyard environment, and the legacy of future generations. Debord vinifies grapes from a mosaic of sustainably farmed vineyards across Burgundy, crafting wines that are elegant, pure, and precise.
Grape Variety: 100% Pinot Noir ‚ sourced from a single plot within the *Chambertin Grand Cru* appellation. The vines sit at an elevation of 280 metres on an 8% gradient, benefiting from a continental climate with warm days and cool nights that preserve freshness. The clay-limestone soils, interspersed with small stones, provide the perfect water balance ‚¬” clay lending body and power, and limestone delivering elegance and lift. Vines are planted at 10,000 per hectare and pruned to retain a large, aerated canopy for sun protection. Sustainable practices include mechanical ploughing, the use of copper and sulphur treatments, and compost from local farms. All fruit is hand-harvested to preserve quality and character.
Vintage: The 2022 vintage combined abundance with excellence. An early start to the season saw budbreak in early April, followed by flowering under warm, sunny conditions in mid-June. A hot, dry summer brought concentration, while intermittent rain refreshed the vines. Harvest began on 25 August under ideal conditions, yielding wines of fine acidity and ripe, balanced fruit.
Winemaking: Whole-bunch fermentation was carried out in stainless steel tanks using wild yeasts, lasting three weeks. No cold maceration was performed; instead, warm fermentation temperatures gently coaxed colour, flavour, and aromatics from the skins. The must was pumped over by gravity and punched down by foot to achieve optimal extraction. The wine was then aged for 14 months in 228-litre French oak barrels from a selection of Central French forests ‚¬” all 100% new oak ‚¬” imparting subtle spice and texture.
Appearance: Bright ruby red with a silken hue and crystalline brilliance.
Aroma: Perfumed and expressive, showing red cherry, raspberry, and blackcurrant complemented by violet, rose petal, and gentle spice.
Palate: Silky and harmonious, with layers of red and dark fruit framed by fine tannins and integrated oak. Notes of spice, minerals, and floral lift lead to an opulent, lingering finish that exemplifies Chambertinof power and grace.
Body: Medium-bodied, combining richness and finesse with poised structure.
Acidity: Fresh and vibrant, maintaining lift and purity throughout the finish.
Cellaring Potential: Drink from 2026 or cellar for 15‚20 years to develop truffle, forest floor, and savoury complexity.
Perfect Pairing: Ideal with duck breast, roast pigeon, or veal fillet with morel sauce.
Serving Temperature: Serve at 15‚16°C to emphasise aromatic nuance and textural finesse.
