About the Winery: Domaines Les Astrelles is located in the heart of Gevrey-Chambertin, named from 'Astre' (stars) and 'Les Parcelles' to reflect the unique individuality of each plot. Jean Marie and Isabelle Chapier took over in 2019, investing in the estate and building a new winery for the 2024 vintage. The estate is certified organic since 2019, with vines over 50 years old, producing wines of extraordinary quality and concentration. Cellar master Julien Millet crafts wines using indigenous yeasts for silky and elegant cuvées.
Grape Variety: 100% Pinot Noir – A thin-skinned, terroir-expressive grape with naturally high acidity and fine-grained tannins, delivering elegant, age-worthy wines. In Gevrey-Chambertin it often shows red-to-black cherry, raspberry, violet, subtle spice, and earthy/savoury notes with a velvety finish.
Appearance: Medium to deep ruby with brilliant clarity; evolves toward garnet hues with age.
Aroma: Notes of wild red berries, cherry, and raspberry with a hint of spice, violet, and subtle earthy undertones.
Palate: A refined, concentrated, and structured palate with great depth of flavour, leading to a long, velvety finish.
Body: Full – This wine is concentrated and structured, indicating a substantial presence on the palate.
Acidity: Medium+ to high – Typical of Pinot Noir from Burgundy, providing freshness, lift, and ageing potential.
Cellaring Potential: Long (10-20 yrs) – The wine's structure and concentration suggest excellent ageing potential, allowing its complexity to evolve over time.
Perfect Pairing: Red Meat, Poultry, Cheese; also game birds, duck, mushroom dishes, and aged Comté.
Serving Temperature: 15–16°C for reds
