Why this wine

A small family domaine working a handful of Gevrey parcels. Traditional in approach, with the fruit left to speak. The least showy of the Gevreys here, and the better value for it.

Description

How it tastes

Well structured with real depth and a firm, savoury finish. Whole berries fermented for fifteen to twenty days and tasted daily to judge extraction.

The producer

Anne and Sébastien Bidault founded the domaine in 2008 — he from Puligny-Montrachet, she the daughter of Robert Gibourg in Morey-Saint-Denis. This comes from three named plots whose vines were planted in 1901, 1921 and 1966.

Food and drinking

Good with poultry & pork, risotto and cheese. Drinking well now, with a decade or more ahead of it. Serve at 15–16°C.
