About the Winery: Domaine Sigalas, based in Oia on the island of Santorini, is one of Greece’s most acclaimed producers, celebrated for its precision-crafted Assyrtiko. Working with ungrafted vines rooted in volcanic soils, the estate champions sustainable viticulture and minimalist winemaking to preserve terroir purity. Kavalieros is a famed single-vineyard bottling from the high, windswept terraces of northern Santorini, producing intensely mineral, age-worthy Assyrtiko that expresses the island’s unique volcanic character with remarkable clarity and finesse.
Grape Variety: 100% Assyrtiko (ungrafted, single-vineyard selection)
Appearance: Pale lemon with green highlights and crystalline brilliance, showing youthful energy and volcanic purity.
Aroma: Highly expressive with notes of citrus zest, green apple, quince and fresh pear, supported by smoky volcanic minerality, sea spray, white flowers and delicate herbal tones. A subtle saline edge reflects Santorini’s maritime influence.
Palate: Intensely structured and linear, with vibrant acidity and powerful mineral drive. Flavours of lemon, grapefruit pith and cool orchard fruit are layered with wet stone, subtle spice and saline tension. The texture is firm, concentrated and sculpted, leading to a long, precise finish that showcases the vineyard’s pedigree and age-worthy potential.
Body: Medium-bodied with strong mineral backbone and tightly focused structure.
Acidity: High — driving tension, precision and exceptional longevity.
Cellaring Potential: 10–15 years; developing deeper layers of honey, chamomile, toasted nuts and savoury complexity while retaining firm mineral structure.
Perfect Pairing: Ideal with oysters, sea bream, grilled octopus, sashimi, lobster, lemon-herb chicken, and Mediterranean dishes featuring capers or olives. The wine’s saline intensity makes it exceptional with coastal cuisine.
