2022 Puligny-Montrachet 1er Cru Les Folatières, Sylvain Debord
About the Winery: Sylvain Debord is a Burgundian winemaker known for crafting elegant, terroir-driven wines with a minimalist and refined approach. His intimate network of growers allows him access to exceptional parcels, including the prestigious Premier Cru Les Folatières—one of Puligny-Montrachet’s most celebrated climats. Situated on well-drained limestone slopes, Les Folatières is famed for producing Chardonnay of purity, tension and floral-mineral complexity. Debord’s gentle winemaking preserves the finesse and precision that define this iconic terroir.
Grape Variety: 100% Chardonnay
Appearance: Pale lemon with green reflections, crystalline and bright, highlighting youthful energy and the precision of the 2022 vintage.
Aroma: Highly expressive with notes of lemon blossom, white peach, pear and citrus zest supported by flinty minerality, toasted hazelnut and subtle spice. Floral nuances and wet-stone elegance reflect the vineyard’s limestone-rich soils and elevated placement on the slopes of Puligny.
Palate: Taut, refined and beautifully layered. Vibrant acidity frames flavours of citrus, green apple and stone fruit, carried by a chiselled mineral backbone. Gentle oak adds texture and finesse without overshadowing terroir expression. The finish is long, saline and lifted, with characteristic Folatières elegance and tension.
Body: Light to medium-bodied with refined, silky texture and understated richness.
Acidity: Medium to high — precise, vibrant and essential for longevity and mineral definition.
Cellaring Potential: 8–12 years; developing richer brioche, honeyed and nutty notes while retaining purity, structure and Puligny lift.
Perfect Pairing: Ideal with sole, turbot, scallops, langoustine, roast chicken, truffle dishes, creamy pastas and refined cheeses. Its precision and floral-mineral complexity pair exceptionally well with elegant seafood and fine French cuisine.
Serving Temperature: 10–12°C to enhance aromatic lift, minerality and textural finesse.
