About the Winery: Sylvain Debord is Burgundian by birth and by heart. He studied at the Lycée Viticole de Beaune in 1991. Sylvain is passionate about respecting the natural environment, cultural environments and conserving the land for future generations and he vinifies grapes from his close network of vineyard partners. He uses a minimalist and refined approach to produce his signature style and his wines are elegant, pure and fresh.
Grape Variety: 100% Pinot Noir – elegant and age-worthy with red cherry and forest floor; thin-skinned, terroir-expressive, delivering silky tannins and a refined, transparent profile.
Appearance: Translucent ruby to deep garnet with brilliant clarity; a delicate rim that may show subtle bricking with age and fine, slow-moving legs.
Aroma: Elegant notes of rich, dark cherry and spice, layered with redcurrant, wild strawberry, violet, subtle vanilla and clove from French oak, and hints of forest floor.
Palate: A perfumed and refined wine with elegant notes of rich, dark cherry and spice enveloping a lovely structure through to a long, charming finish; silky texture, fine-grained tannins and a subtle mineral line.
Body: Full – enveloping a lovely structure with supple, polished tannins.
Acidity: Medium – The 2022 vintage produced wines with balancing acidity and concentration.
Cellaring Potential: Medium (5–10 yrs) – Aged for 12 months in 228-litre French oak barrels, indicating good ageing potential; will develop notes of sous-bois and truffle with time.
Perfect Pairing: Red Meat, Poultry, Cheese (think roast duck, herb-crusted lamb, mushroom dishes, and semi-soft cheeses).
Serving Temperature: 15–16°C for reds
