2022 Savigny-lès-Beaune 1er Cru, Sylvain Debord
About the Winery: Burgundian by birth and by heart, Sylvain Debord studied at the Lycée Viticole de Beaune and the University of Burgundy, where he contributed to technical research and managed the Experimental Viticultural Centre in Marsannay-la-Côte. Passionate about respecting the natural and cultural environment and conserving the land for future generations, he vinifies grapes from a close network of vineyard partners across a mosaic of appellations, using a minimalist, refined approach to craft elegant, pure and fresh wines.
Grape Variety: 100% Pinot Noir
Appearance: Medium ruby with a bright, translucent rim, reflecting its cool-climate, limestone-rich origins.
Aroma: Perfumed and refined with dark cherry, black raspberry and lifted spice, layered with dried rose, subtle earth and a hint of oak sweetness.
Palate: Elegant yet structured, showing rich dark cherry and spicy red fruit wrapped in fine-grained tannins, with fresh acidity and a long, charming, savoury finish.
Body: Medium.
Acidity: Medium to high, providing balance and freshness.
Cellaring Potential: Enjoy now for its perfumed fruit or cellar for 5–8 years from vintage for greater complexity.
Perfect Pairing: Roast duck or chicken, herb-crusted lamb, game birds, charcuterie and mushroom dishes such as risotto or roasted mushrooms.
