Description

2023 Stonevik, Vina VIK

About the Winery: Viña VIK is an ambitious, cutting-edge estate located in Millahue in Chile’s Cachapoal Valley. Founded on a philosophy of scientific research, sustainability and holistic viticulture, the estate farms organically and biodynamically, crafting wines that express precision, purity and a deep sense of place. Stonevik represents VIK’s most innovative natural-winemaking project, produced from select parcels and crafted exclusively from estate-grown fruit with minimal intervention to highlight the vineyard’s unique Andean terroir.

Grape Variety: Cabernet Franc 77%, Cabernet Sauvignon 19%, Carménère 4%

Appearance: Deep, opaque ruby with a vibrant purple rim, showcasing youthful concentration and density.

Aroma: Intense notes of blackberry, blackcurrant and dark plum layered with earthy tones of forest floor, mushroom and graphite. Subtle hints of sage, cocoa and spice complete a complex, evolving aromatic profile.

Palate: Full-bodied and tightly structured with concentrated dark fruit, velvety yet firm tannins and a vibrant core of acidity. Earthy and mineral nuances—graphite, sage and dark chocolate—build toward a long, savoury, layered finish with impressive persistence.

Body: Full-bodied with depth, weight and refined power.

Acidity: Medium to high, contributing freshness, lift and structural balance.

Cellaring Potential: Excellent—enjoy now for its bold, primary fruit or cellar 10–15 years to develop greater savoury complexity and textural harmony.

Perfect Pairing: Ribeye steak, slow-braised beef, lamb loin, venison, wild mushroom dishes, truffle-infused cuisine and aged hard cheeses such as Pecorino or Manchego.

Serving Temperature: 16–18°C; decant for 1–2 hours to fully reveal aromatic complexity and depth.
