About the Winery: Agnès & Didier Dauvissat are a highly regarded family domaine in Chablis, known for producing precise, mineral-driven Chardonnay from carefully tended vineyards around the village of Fyé. Working traditionally with minimal intervention and long lees ageing, they craft wines that capture the purity, tension and saline character of classic Chablis. ‘Les Brèches de Fyé’ comes from parcels rooted in Kimmeridgian limestone, giving the wine its hallmark chalky freshness and crystalline structure.
Grape Variety: 100% Chardonnay
Appearance: Pale lemon with green reflections and pristine brightness, expressing youthful cool-climate vibrancy.
Aroma: Citrus zest, green apple and white flowers lifted by crushed oyster shell, flint and delicate herbal tones. Pure, focused and classically Chablisien in style.
Palate: Crisp, mineral and finely etched with vibrant acidity, flavours of lemon, pear and chalky stone. The texture is sleek and polished, leading to a long, saline finish marked by tension and precision characteristic of Fyé’s limestone terroir.
Body: Light to medium-bodied, refined and linear in structure.
Acidity: High — the defining backbone of classic Chablis, offering lift, focus and exceptional ageing potential for a village wine.
Cellaring Potential: 4–6 years; developing rounded texture, light honeyed notes and deeper minerality while retaining freshness.
Perfect Pairing: Oysters, shellfish, sushi, grilled white fish, goat cheese, lemon chicken, vegetable terrines and fresh salads. Its saline-mineral backbone pairs beautifully with seafood and pure, delicate flavours.
