About the Winery: Founded in 1860 in Santenay, Prosper Maufoux is a historic Burgundy house known for its elegant, terroir-driven wines and long-standing commitment to craftsmanship. Today the estate cultivates vineyards across the Côte d’Or and the Hautes-Côtes, where higher altitudes, limestone-rich soils and cooler temperatures produce Chardonnay of freshness, finesse and distinctive mineral tension. Sustainable farming and precision winemaking ensure purity and authentic regional expression in every bottle.
Grape Variety: 100% Chardonnay
Appearance: Pale lemon with green highlights and bright clarity, reflecting cool-climate ripening at higher elevations in the Hautes-Côtes.
Aroma: Fresh citrus, green apple and pear lifted by white flowers, crushed limestone and subtle almond notes. Hints of acacia and delicate lees character add nuance and elegance without overt oak influence.
Palate: Crisp, focused and mineral-driven with lively acidity and flavours of lemon, ripe apple and stone fruit. A gentle creamy texture from lees ageing enhances balance, while the hallmark Hautes-Côtes chalky minerality shapes a long, precise and refreshing finish.
Body: Light to medium-bodied with a sleek, harmonious texture and fine mineral backbone.
Acidity: Medium to high — vibrant, energetic and essential to the wine’s cool-climate precision.
Cellaring Potential: 3–5 years; developing deeper texture, light nutty tones and enhanced mineral definition while retaining freshness.
Perfect Pairing: Ideal with grilled fish, shellfish, roast chicken, sushi, goat cheese, creamy vegetable dishes and light pasta. Its balance of freshness and subtle creaminess makes it extremely food-versatile.
