About the Winery: Grace Wine was established in 1923 in the Yamanashi Prefecture, the birthplace of the Japanese wine industry. They are committed to the belief that great wine is made in the vineyard, being the first to research and introduce European training and pruning methods. Since 2016, their vineyards have been cultivated using organic practices, and they have joined the '4% Initiative' project, which focuses on soil health for food security and to help combat climate change. Talented winemaker Ayana Misawa crafts wines from the indigenous Koshu grape variety in a contemporary style, beautifully capturing its delicate characteristics.

 

About Koshu: Japan’s indigenous, pink?skinned grape from Yamanashi, Koshu is naturally low in alcohol, with high acidity and delicate flavors (yuzu citrus, pear, white peach, white flowers, wet stone). Its thick skins suit Japan’s humid climate; traditional pergola (tanazukuri) training helps airflow and sun exposure. Typically vinified in stainless steel with gentle lees aging for texture, producing light, mineral, subtly umami?tinged wines that pair excellently with sushi, sashimi, tempura, and lightly seasoned seafood.

 

Grape Variety: 100% Koshu – Japan's most important indigenous grape variety, grown in the Katsunuma region. It produces wines with concentrated flavours and balancing acidity due to high-altitude vineyards and diurnal temperature swings.

 

Appearance: Pale lemon with faint copper glints.

 

Aroma: Fresh pear, white peach, honeysuckle, rosemary, clove and mineral stone notes.

 

Palate: Dry, with a lively palate of crisp, ripe fruits and a charming acidity which offers the wine great backbone, through to a hint of umami on the finish.

 

Body: Medium - This wine has a good structure and presence on the palate, balancing fruit and acidity.

 

Acidity: High - The wine exhibits a charming acidity that provides great backbone and freshness, balancing the concentrated fruit flavors.

 

Cellaring Potential: Short (2–5 yrs) - While enjoyable now, this wine has the potential to develop further complexity with a few years of cellaring.

 

Perfect Pairing: Seafood, Poultry, Cheese

 

Serving Temperature: 8–10°C for whites
