About the Winery: Oenops was founded in 2015 by acclaimed winemaker Nikos Karatzas, who operates as a negociant crafting distinctive wines from indigenous Greek grape varieties. Working with organically farmed, cool-climate and old-vine plots across Drama and Macedonia, Karatzas employs a minimal intervention philosophy, vinifying plot-by-plot in stainless steel, amphorae, concrete and oak. His state-of-the-art winery focuses on expressing terroir identity and varietal purity, resulting in authentic, elegant and innovative Greek wines.

Appearance: Bright ruby with soft purple highlights and clear brilliance.
Aroma: Enticing aromas of cherry and gooseberry, accented by delicate floral acacia and spicy, mineral undertones of graphite.
Palate: Silky-smooth and elegant, with a fresh, fruit-driven core and a subtle spicy character. Fermented with wild yeasts in amphorae and 500-litre French oak barrels, then aged nine to ten months on fine lees in concrete, stainless steel, amphorae and 20% in fourth-use oak barrels. The result is refined texture, natural acidity and pure expression of Limnionaof freshness and finesse.
