About the Winery: Ippolito is the oldest winery in Calabria, with over 170 years of history. Located in the historic centre of Cirò Marina, the farm comprises a 100-hectare agricultural estate. The Ippolito family values its heritage and follows a sustainable philosophy to protect the terroir, enhance native vines, and preserve the ecosystem.
About Pecorello: A rare, indigenous Calabrian white distinct from Pecorino; its name likely recalls small “sheep-like” clusters. It thrives on coastal and hillside sites around Cirò, often on clay-limestone soils, yielding aromatic, mineral wines with a saline thread. Typically vinified in stainless steel, sometimes with brief lees contact for texture, Pecorello shows citrus, peach, white flowers, and gentle herbal/fennel notes, with medium body and fresh acidity. Best enjoyed young, it can gain subtle almond/honeyed nuances over a few years.
