About the Winery: Situated in Bué in the Sancerre region of the Loire Valley, the Millet family has been making wine for over five generations. The Domaine is now run by Gérard and Isabelle, along with their son Steve. They cultivate their vineyard sustainably with respect for the environment and biodiversity, having gained HVE Level 3 certification in 2020. They have invested in new heat exchange equipment to ensure maximum freshness in their wines.
Grape Variety: 100% Sauvignon Blanc – Expect vibrant notes of grapefruit and lemon, with a clean, crisp, and mineral finish, characteristic of the Sancerre appellation. Classic Sancerre Sauvignon Blanc also shows gooseberry, lime zest, white flowers, and a flinty edge from silex soils; limestone (caillottes) adds lift and purity, while terres blanches (Kimmeridgian clay) brings texture.
Appearance: Pale straw with green highlights; brilliant clarity and slight viscosity; rapid, fine legs reflecting moderate alcohol.
Aroma: Vibrant Sauvignon notes of grapefruit and lemon, complemented by gooseberry, green apple, lime leaf, elderflower, subtle nettle, and a delicate flinty/smoky mineral nuance.
Palate: Good weight with a clean, crisp, and mineral finish, showcasing purity of fruit and true Sancerre expression. Zesty citrus and green fruit at the core, chalky-saline tension, and a linear, mouthwatering drive; typically fermented in stainless steel with brief lees contact for texture, no oak influence.
Body: Medium – This wine has good weight and a balanced structure, offering a satisfying mouthfeel without being overly heavy.
Acidity: High – The wine exhibits a crisp acidity that contributes to its freshness and clean finish, balancing the fruit flavours.
Cellaring Potential: Short (2–5 yrs) – This wine is crafted to be enjoyed for its freshness and vibrant fruit, best consumed within a few years of vintage.
Perfect Pairing: Seafood (oysters, shellfish, sushi), goat cheese (Crottin de Chavignol), salads with citrus or herbs, asparagus, light poultry dishes.
