About the Winery: Established in 1757, Abelé is the fifth oldest Champagne House and has been family-run for generations. They follow a philosophy that great Champagnes, with an artisanal flair, come from taking time and patience, with meticulous winemaking and the skilful blending of tradition and innovation. Grape Variety: 100% Chardonnay (Blanc de Blancs) – leaves an indelible impression on the signature Abelé 1757 style, offering elegance, minerality, and a delicious saline note. Classic Chardonnay characters of lemon zest, green apple, white flowers, and chalk drive precision and length.
Appearance: Pale lemon-gold with a fine, persistent mousse and delicate bead; bright clarity.
Aroma: Great aromatic richness, delicate floral and peppery notes, with citrus, green apple, and subtle chalky nuances.
Palate: Fresh on the palate, with elegant minerality and zippy citrus notes, leading to a cuvée of great finesse; saline lift and creamy, refined mousse.
Body: Medium - full, creamy texture with richness and complexity from ageing on lees.
Acidity: High - zippy citrus notes contribute to freshness and balance.
Cellaring Potential: Short (2–5 yrs) - aged for at least three to four years in deep, chalky cellars, can be enjoyed now or aged for a few more years.
Perfect Pairing: Seafood (oysters, scallops, sushi), Poultry (roast chicken), Cheese (Brillat-Savarin, Comté), and lightly creamy dishes.
