About the Winery: Champagne Geoffroy is a highly respected grower-producer based in Aÿ, renowned for its meticulous vineyard work, traditional craftsmanship and unwavering commitment to terroir expression. The estate farms its own vineyards, favouring old vines, massal selections and low-intervention winemaking. Les Houtrants is a rare co-planted parcel where all seven authorised Champagne grape varieties grow together, harvested and pressed as one field blend. Bottled as Brut Nature and aged extensively on lees, this cuvée showcases purity, tension and the unique character of this historic vineyard.

 

Grape Variety: Field blend of all seven Champagne grapes (Pinot Noir, Chardonnay, Meunier, Pinot Blanc, Pinot Gris, Petit Meslier, Arbane)

 

Appearance: Pale gold with fine, persistent bubbles and crystalline brightness, reflecting long ageing and zero dosage clarity.

 

Aroma: Complex and intensely mineral. Notes of citrus peel, green apple, white flowers and quince combine with chalk, almond skin, light spice and subtle autolytic tones. The co-fermented varieties create an aromatic profile with remarkable lift and nuance.

 

Palate: Taut, precise and deeply expressive. High acidity and ultra-fine bubbles support flavours of citrus, stone fruit and saline minerality. Brut Nature purity gives a clean, chiselled structure, finishing long with chalk, citrus oil and savoury tension. A benchmark field-blend Champagne showing finesse and terroir transparency.

 

Body: Light to medium-bodied with sculpted structure and refined mousse.

 

Acidity: High — energetic, linear and essential to the cuvée’s precision and longevity.

 

Cellaring Potential: 8–12 years; developing richer autolytic complexity and deeper mineral intensity while retaining freshness.

 

Perfect Pairing: Outstanding with oysters, sashimi, scallops, langoustines, ceviche, goat cheese and delicate seafood dishes. Its purity and chalky tension perfectly complement fine, minimalist cuisine.
