Description
How it tastes
Refreshing and textured, with citrus over herbal thyme and rosemary and a hint of spice. Cool-macerated in the press, then fermented in concrete.
The producer
The vineyards sit in the foothills below Saint-Guilhem-le-Désert, a UNESCO World Heritage site. Caves Fonjoya is a young co-operative founded in 2018, its name from the Languedoc patois for fountain and joy.
Food and drinking
Good with seafood, salads and poultry & pork. Ready now, and will hold for a few years yet. Serve at 8–10°C.
