How it tastes
Lime, mandarin and citrus with the herbal, mineral edge of fennel and gooseberry leaf, and a flinty streak underneath. Vibrant and juicy, with zesty acidity and a delicate mineral finish. Sauvignon Blanc 100%.
The producer
Undurraga was founded in 1885 and farms 1,350 hectares across Chile's best sites under Sustainable Wines of Chile certification; the Terroir Hunter range is head winemaker Rafael Urrejola's project to bottle each of those sites on its own, and in 2023 the IWC named him Red Winemaker of the Year, a first for Chile. This Sauvignon comes from small, low-yielding plots on west-facing, wind-exposed slopes in the Leyda Valley, 14 km from the Pacific, on thin loamy clay over a rare calcareous subsoil. After sorting and a cold soak the juice was cold-settled 48 hours and fermented 18 days at 13–15°C in steel, 10% in older French barrels, then aged five months on its lees. The cool, cloudy 2021 season delayed harvest and cropped just 1.4 kg a vine, making this vintage more herbal and mineral than usual.
Food and drinking
Good with oysters, ceviche, grilled sea bass and goat's cheese salads. Drink over the next two to three years. Serve at 8–10°C. Suitable for vegetarians and vegans.
