Why this wine

Lambrusco's reputation was built on sweet industrial bottlings; Phermento is the opposite — dry, refermented in the bottle, from Sorbara fruit grown at yields well below the DOC limit. It is light enough to drink cold through a summer lunch and structured enough to sit beside a plate of salumi. Medici Ermete is the name that has done most to restore the style.
