How it tastes
Full-bodied yet elegant, with raspberry, Morello cherry and a subtle smokiness over a beautifully balanced structure. Fully destemmed, three weeks' maceration with daily pump-overs.
The producer
Cornas means 'scorched earth' in Celtic, a clue to the exposure. Jaboulet was founded in 1834 and farms seven northern Rhône appellations; the Frey family bought it in 2006, with Caroline Frey now making the wines.
Food and drinking
Good with red meat, game and cheese. Built for the long term — decades, if kept well. Serve at 16–18°C to highlight its structure and aromatic precision.
