Why this wine
Goulley went organic in 1991, among the very first in Chablis to do so, and still farms every hectare that way with minimal sulphur. No oak, natural yeast and yields capped at 60 hl/ha, so the Kimmeridgian fossil soils come through undiluted. A third-generation domaine where the Premier Cru holdings set the standard for the village wine.
