Why this wine

Vaudésir is the most amphitheatre-like of the Chablis Grand Crus, and Fèvre's steep, fully south-facing 1.2 hectares give it energy rather than weight. Only a third sees oak, and briefly, so the detail stays intact. The Grand Cru to open first while the others sleep.
