Why this wine

Soave's reputation was destroyed by industrial bottlings in the 1970s, and growers like this have spent forty years rebuilding it. Old-vine Garganega on volcanic soil, textured and almond-scented. Nothing like the Soave people remember.

How it tastes

Soave of real finesse and aromatic complexity: fine floral notes, peach and apricot and a hint of spicy minerality. Harmoniously balanced, with richly textured, crystalline fruit, a touch of pineapple and a long, elegant finish — 100% Garganega.

The producer

Roccolo Grassi was founded in 1996 by Bruno Sartori and his children Francesca and Marco, and winemaker Marco Sartori is one of the Veneto's brightest talents, working on the simple principle that sharply reduced yields give concentrated fruit. The 15-hectare estate sits in the Val di Mezzane at 200–300 metres on cool, free-draining calcareous alluvial soils, each vine pruned individually to limit its crop, with two hectares of woodland, olive groves and fruit trees forming a small ecosystem around the vineyard. After careful selection and gentle pressing, the must is fermented in temperature-controlled stainless steel, goes through full malolactic conversion and is aged 12 months, half in seasoned 22-hectolitre Slovenian oak casks and half in concrete.

Food and drinking

Good with poultry, seafood, pasta and risotto. Ready now, and will hold for a few years yet. Serve at 9–10°C. Suitable for vegetarians and vegans.
