Why this wine
Rocim led the revival of talha, the Alentejo's ancient practice of fermenting in clay pots, and this is the wine that made the case for it. Old vines of Moreto, Tinta Grossa and Trincadeira, indigenous yeasts, no additions and no temperature control, then six months on the skins. At 12% it is a red for the table rather than the cellar, and it drinks best with a slight chill.
