Why this wine

A family estate blending several of its own Kimmeridgian parcels rather than buying fruit in, which is rarer at this level of Chablis than it should be. Wild-yeast fermentation and six months on fine lees give it a little more flesh than the usual steel-tank village wine. Textbook Chablis without the Premier Cru premium.
