Why this wine

A grower's Chablis made entirely without oak, so what reaches the glass is Kimmeridgian limestone and citrus rather than barrel. Six to eight months on fine lees supplies the texture that cheaper Chablis usually lacks. HVE-certified farming on hillside plots in the heart of the appellation.
