Why this wine

White Saint-Joseph is a small fraction of the appellation and rarely leaves France in quantity. The Botts ferment it in old barrels and leave it on its lees without stirring, which gives texture while keeping the granite freshness intact. Precise and saline, and a rare chance to see the appellation in white.
