Why this wine

Wild yeasts, four different vessels and no temperature control give this more texture and complexity than the stainless-steel Santorini norm, without blunting the island's salinity. The fruit comes from 80-year-old ungrafted vines in volcanic sand, trained into kouloura baskets against the wind.
