Why this wine

Demi-Sec Vouvray is the most misunderstood wine in the Loire: off-dry rather than sweet, and one of the few whites that can take chilli or blue cheese without flinching. Jean-Marc Gilet's organic single vineyard on flinty perruche clay gives it the acidity to carry that sugar for a decade.
