Why this wine

Leyda is the coldest serious vineyard land in Chile, and it gives this sparkler an acidity most tank-method fizz outside Europe cannot manage. The extra brut dosage keeps it dry enough for oysters rather than pudding. It fills the everyday aperitif slot with something drier and more mineral than the category norm.
