How it tastes
Chamomile, lemon, melon and pear with toasted hazelnut, a hint of ginger and butterscotch. Smooth and creamy, the gentle oak spice balanced by coastal freshness and a saline, mineral finish. Chardonnay 100%.
The producer
Undurraga was founded in 1885 and farms 1,350 hectares across Chile's best sites under Sustainable Wines of Chile certification; the Terroir Hunter range is head winemaker Rafael Urrejola's project to bottle each of those sites on its own. This Chardonnay is clone 548 from a single 2.39-hectare plot at Quebrada Seca on the north bank of the Limarí River, 13 miles from the Pacific in a semi-arid valley of misty mornings, windy afternoons and cool nights, on an ancient alluvial terrace of 50% gravel over calcareous subsoil. After sorting and gentle pressing with controlled pre-oxidation, the juice was cold-settled and fermented with natural yeasts at 15–17°C in egg-shaped concrete tanks and large Burgundian oak barrels, 16% new, then aged ten months on its lees with regular bâtonnage.
Food and drinking
Good with roast chicken, scallops, creamy fish pie and mild curries. Drinking well now and will develop for five years. Serve at 10–12°C. Suitable for vegetarians and vegans.
